原料 豆苗400克。
调料 蒜瓣25克,大葱10克,精盐1小匙,米醋、味精、香油各少许,植物油2大匙。
制作步骤
①选用新鲜、茎粗、肥嫩的豆苗,去掉根,用清水洗净,沥干水分。
②蒜瓣剥去外皮,洗净,沥水,剁成蒜蓉;大葱去根,洗净,切成碎末。
③锅置旺火上烧热,放入植物油烧至五成热,下入蒜蓉和葱末煸炒出香味。
④放入豆苗,端锅不断翻炒片刻,烹入米醋,继续煸炒至豆苗由青变绿。
⑤快速放入精盐和味精调好口味,继续煸炒至豆苗断生并且入味,淋上香油,出锅装盘,上桌即成。
